Lemon Juice Salad Dressing

This lemon juice salad dressing with freshly squeezed lemons goes well with all types of lettuce or any other mixed greens recipe.
Ingredients:
Lemon juice from half a lemon
Tablespoon of olive oil
Clove of garlic
Directions:
Combine lemon juice and oil in small bowl.
Add salt and pepper to taste.
Add the garlic, pressed or finely minced.
Mix well before adding to salad.
Lemon Meringue Pie With Fresh Lemons

Lemon Meringue Pie is a delicious dessert. This recipe is ideal for satisfying your sweet tooth. It's easy to make in just 30 minutes.

Servings: 20
Ingredients:
7 ounces of buttered cookies (shortcake)
2/3 cups of margarine
1 can of condensed milk (370g)
3/4 lemons ( 1 half cup of juice + the outer scrapings )
5 eggs
5 1/2 ounces of sugar
Directions:
Pre-heat the oven to 425 ºF.
Separate the yolk from the egg whites and mix the yolks with the condensed milk into whipped cream.
Meanwhile, mash the cookies into a powder and mix it with the margarine while covering the bottom and sides of a pie dish.
Take the outer scrapings of a lemon with a gratter and squeeze the juice of all the lemons.
Mix the scrappings and the juice with the yolk and add to the pie dish.
Place it to the oven.
Meanwhile, mix the egg whites until they start to foam, add the sugar then and keep mixing them until the meringue starts to be firm.
After 10 to 15 minutes in the oven, cover the surface of the pie with small dumpings of meringue with a spoon.
Reduce the heat of the oven to 320 ºF and put the pie back into the oven until the meringue on top becomes golden brown. If you prefer, you can also add thin fresh lemon slices on top for enhancements.
Lemon Blueberry Bars

These easy Lemon Blueberry Bars are a great treat for summer. Their tarty goodness is enhanced by sweet white chocolate chips, giving them a bit of flavor for everyone to enjoy.

Ingredients:
1 stick butter, melted
1 box lemon cake mix
2 eggs
1/3 cup fresh blueberries
2/3 cup white chocolate chips, divided
1/3 cup chopped pecans
Heat oven to 350 ºF.
In the bowl, combine butter, cake mix, eggs, blueberries, 1/3 cup white chocolate chips and pecans.
Butter 7-by-11-inch pan and spread mixture evenly into pan. Bake 30-35 minutes.
Let cool, then melt remaining white chocolate chips and drizzle over bars.
Tip: If melted white chocolate chips are too thick, add a little oil before drizzling.
